Our Story

Nestled in the heart of Riverdale, New York, Tobalá is an Oaxacan-inspired restaurant owned and operated by Chef Moisés López, his wife, Eluisania López, Moisés' sister Roma Mercader, and her husband, Billy Mercader, who together bring their deep-rooted love for Oaxacan cuisine and culture to every part of the dining experience. They have spent over a decade perfecting their craft through learning from artisans and chefs both in Oaxaca in New York.

The name "Tobalá" is inspired by one of the most revered species of agave in Oaxaca for its properties in food, drink, and medicine. Our beverage program features traditional Mexican cocktails and a curated selection of mezcals and tequilas that are grown and distilled by families who have been practicing the craft for generations. Our menu reflects the rich and complex flavors of Oaxaca's cuisine, featuring dishes that honor traditional ingredients. Signature dishes include callos y mole verde, where scallops meet mole verde, pumpkin seeds, and cilantro oil; Pulpo de Puerto is paired with an earthy chicatana salsa and homemade tortillas, and enmoladas de pato are enveloped in our decadent mole negro.
